NON was founded by Aaron Trotman in 2019, a foodie on a mission to shape the future of non-alcoholic drinks. The drinks are all made in-house by a team of expert food and drink professionals in a purpose-built facility in Melbourne, Australia: one of the epicentres of the gastronomic world.

Born out of the fine dining scene and crafted in Melbourne, Australia, we create wine alternatives that are made from real produce, infused with culinary thinking, and built to pair with food.
We don’t mimic wine—we make something entirely new. Each NON variant is carefully formulated with ingredients like whole fruits, herbs, spices, teas, and verjus to deliver a complex, layered drinking experience without alcohol, preservatives, or artificial flavours. The result is a line of zero-alc beverages that appeal to drinkers and non-drinkers alike—served in top restaurants, bars, and homes across the globe.
Our production process combines techniques from winemaking, perfumery, and gastronomy to extract flavour, texture, and structure—bottling sophistication without the booze. Sustainability is central to our approach, with minimal-waste practices, local sourcing, and a commitment to transparency in everything we make.
NON is now exported to over a dozen markets and served in venues with Michelin stars and serious standards. We’re here to challenge expectations, make people think differently about what’s in their glass, and lead the next wave of premium non-alcoholic innovation.
